Enzymes, whose active centre contains metal ions, require ascorbic acid as a cofactor to revert or remain in a reduced state. The reduced state of the enzyme is necessary, for example, to undergo synthesis of collagen, a special constituent of all tissues, since without it the tissues are soft and impermeable, the wounds heal longer, spontaneous bleeding and capillary rupture occur. It also participates in the creation of catecholamines or carnitines.
